How would you describe this book?
This is a book for people who love veggie food and who are looking for some delicious recipes with a low calorie count. It is specifically designed to fit the 5:2 concept of dieting, whereby women consume only 500 kcal and men 600 kcal on 2 days a week. Calorie-counting is fiddly and time-consuming, but this book takes all the effort out of that by giving calorie-counted meals for 8 different, complete days.

Where did the idea for this book come from?
When I started the 5:2 diet a couple of years ago, I realised that there were very few veggie recipes for the low-calorie days, and those that were, tended to be basic and unadventurous. 5:2 is a long-term eating programme as much as a diet, so it was necessary to create meals worth looking forward to!

What is your favourite recipe in this book? Why?
I love Aubergine/eggplant with tofu and noodles because that seems to pack a really tasty and nutritious punch in amazingly few calories. However, my favourite is probably Green and red warm salad. One day I made this for friends, and assembled it at table while we were talking. It was so bright and colourful. And delicious, too.
