How would you describe this book?
A simple guide for those who aren’t willing to give up ice cream, either because they want to eat more healthily or because they are vegan. It’s a small starter guide to teach you the basics and inspire you to get creative in the kitchen.
Where did the idea for this book come from?
Summer hadn’t really kicked in yet when I thought of it: it was June but the weather was rainy, cold, dreary. And all I wanted was to lie on a beach with a decent vegan ice cream on a cone.
What is your favourite recipe in this book? Why?
The Mango Lassi Crunch Froyo took me by surprise. I’m a sucker for soya yogurt (I could eat the whole tub in one go). The mango reminds me of my life-changing trip to India, and the almonds are great for calcium and a bit of bite.
